Rice Paper Rolls... for Emily, and anyone else who loves Thai food.

I put any vegetables that I may have in the fridge - especially red capsicum, carrot, coriander and cucumber. I bypass the mushrooms, as I seem to be the only one who likes them.
In the dipping sauce I add soy sauce and a dash of fish sauce.
They are yummy, and my girls love them! A great way to get them to eat veggies.

Jenny- do you have a recipe for meat pies? My husband hasn't had one of these since he left Australia--!!

These look so good! They just look like Spring and all things fresh and new. We have a Thai market just around the corner. I'll have to pop in for all the ingredients and give these a try. Thanks so much for the recipe! I'm with Emily--I'd love some Australian recipes. My son did a presentation on Australia back in September and we made Anzac biscuits, but I'd love to know what "the locals" eat!
